We couldn't resist to also ferment our own kimchi. We ferment it at the brewery, per small batch and let it age as much as we can. We created our own fresh chilli mix, combined with unrefined sea salt from Guérande mixed with wakame to bring dept and umami! To top it off our kimchi is vegan and raw!
We love to pair it with a glass of Lapsang Souchong kombucha, make onigiri with it or on a tosti with our hokkaido brioche!
When open transfer your kimchi in a container and preserve it on the fridge.
